Root Chakra Happiness: Spicy Sweet Potato Salad

Serves 4

Sweet Potato Salad

Salad Ingredients:

  • 4 cups cooked & diced Sweet Potatoes or combine with Yams (leave firm for some crunch)
  • Green Red or Yellow Pepper diced into chunks
  • Green Onions diced into chunks
  • Garlic Greens diced small
  • Parsley – chopped
  • Optional:  Tomatoes

Toss ingredients and stir in hot sauce recipe below.  Chill for 20 minutes and serve!

Dressing Ingredients:

  • 1/4 cup mayonnaise
  • 1 tbp Sriracha
  • 1 tsp lime or lemon juice
  • 1 tsp soy sauce
  • Salt & Pepper

Combine ingredients and stir until a bright creamy orange colour.
